Meal Ideas

I need some serious help! I love to cook, but seems like I never have time. It stinks because Matt has to work until 8 pm each night, but Wednesday's and Friday's. By time he gets home at 8:30, I really don't feel like cooking. I DESPERATELY need to go grocery shopping, but always dread it because I never know what to buy.
Matt is a very picky eater...he does not eat any vegetables or anything with onions in the food. So, it makes it difficult on me to buy things or think of things to make.
If everyone could post a comment for a good recipe that is easy, with no vegetables or onions. I eat vegetables so if there is something to make that is good I will make it for myself!!

I just need some good ideas for some nice, homemade meals. OH, crockpot recipes are fabulous, if anyone has any good recipes for the crock pot...besides pot roast! I know how to make that!

I don't eat veggies or onions either.

How about chili, you could make it in advance and just leave it simmer until he gets home.

Spaghetti and meatballs?

Oh I make this beef and noodle thing that is so easy. I forget what it is called. Just brown ground beef, add a couple cups of water and egg noodles. Once noodles are soft add a can of cream of chicken or mushroom if you like it and then Velveeta cheese, let it melt and yum-o it is so good.

I hope I am not copying Rodrigo's suggestions...I don't speak or read Spanish that well.

It sounds weird, but you can buy cans of beef in broth - they are really big and cost about 7 dollars a can - at most grocery stores. I cook noodles and put them in the crock pot and then dump a can of the beef w/ broth over it. I add another can of broth also. You can leave it on low for several hours. I turned my nose up at first, but it is really, really good and easy.

I can give you the recipe for that meal I made for you guys after you had Olivia - it is sooooooooooo easy and yummy (mmmm, I might make that tonight for dinner!) Anyway, it is chicken tortellini. You just take some chicken cubes and mix it in with a bag of tortellini and a large jar of spaghetti sauce (any kind - I switch between chunky veggie and various others). Then, you put in in the oven at 375 for about 40 minutes. I sprinkle parmesan cheese on top as well.
I like to eat it with Green bean casserole, garlic bread and sometimes a salad. Gary says I'm weird for the green bean casserole with it, but I have always liked the two together!
